Gluten Free Jello Cups

Here is another easy summer recipe that's just as important to summertime fun as shorts and sandals. I have eaten this more times than I can remember and best of all its Gluten Free!   The ingredients can be a little tricky but they are as follows:

1 (85 g) package Jell-O (cherry, peach, strawberry, grape, etc...) I used grape here.....
Sliced strawberries, or your favorite fruit.
1 (8 ounce) can whipping cream or Cool Whip



Boil 1 cup of water.


In medium size bowl add jello crystals and 1 cup hot water. Stir until the crystals dissolve, about 2 minutes.


Stir 1 cup of cold water into the mixture.

Prepare sliced strawberries in the bottom of large bowl, or in the bottom of small portion size bowls / cups.


Pour jello liquid into your cup(s) over top of the your fruit



Cover bowls / cups with saran wrap and place in fridge for a few hours, or until set.

Add whipped cream for something your kids will love.

Its so easy even I can do it and it's Gluten Free!  I'm in the mood for summer based foods and snacks and this fits the bill perfectly.  I've seen people make Jello pops, ice cubes and more.  The possibilities are endless for this ageless snack.  Enjoy!!
